先日ご案内していたお酒が入荷！

 

奈良・春鹿　「純米超辛口　中取り」

 

春鹿・古川杜氏のコメント（いただいた資料より）

「キレを追い求めつつ味を出す」というのが純米超辛口の毎年の命題。今年は、蒸米はやや柔らかく、製麹時間も長めにし、この純米超辛口中取りでは汲水歩合いを少なく仕込んでみました。さらに瓶燗１回火入れをすることで辛口でありながらまろやかな米の旨味を感じ、最後には「春鹿の超辛口」を感じることのできるお酒を目指しました。
